Since ARISE runs three months a year, they are always looking for someone to cook vegetarian/vegan meals for 40-50 people. The last several years they have had a different cook every year and this year is no different. Our preparer of yummy vegan meals is Beverly, and she is awesome ! Ty apparently takes the credit for finding her since she is his friend. Either way, we all love Bev. She isn't a chef by trade but has experience cooking for large groups, and she's doing a wonderful job for us. She hails from Eureka, CA, a 5+ hour drive southwest. Since she's from a distance, she gets to dorm here with the rest of us. It has been so much fun helping Bev in the kitchen (part of my group's chores). Here is a sampling of what we've been eating:
Homemade wontons - a couple of us helped make these. Yummy!!
Sweet and tangy tofu vegetables

Irish potatoes (mashed and mixed with leeks and cabbage) and a hearty veggie stew (with Bev-made gluten)

This has been one of my faves so far. Bev says it's her husband's dish - toasted baguette with tofu scramble and grilled (in oven) tomato with parsley to top.
It was somewhat of a production putting these together...but we had fun. Here are two of my group members with Bev.
And lastly, Bev and her husband. Kelly drove up one weekend to visit and he helped in the kitchen...
